How can you tell if a lobster is a native lobster?

The native lobsters are a striking blue colour, ranging from a deep dark blue to a pale indigo. The variation in colour tells us how deep the water was where the native lobster lived. If the lobster is pale blue the water was shallow and the darker the blue the deeper the water.

What makes a native lobster so special?

The meat is so sweet and white and at this time of year the quality is second to none. The boats we buy from are all sustainable fishermen, as it is in their best interests to preserve the lobster stocks to ensure the lobster stocks are healthy for years to come.
