The best loved Jamaican dish, the Potts' jerk marinade has plenty of heat from fruity habanero chillies and a fragrant spicy kick from pimenta allspice (also called Jamaican Pepper) and mellowed with a little rum. Perfect for charcoal barbecued seafood with a fresh salad. A convenient marinade in a re-sealable bag which means less mess and no washing up!

Serves 4, contains enough marinade for approx 600g meat, fish or vegetables.
