Description

Native Oysters are the oysters that the 'R' in the month saying comes from - as they are only available from September through to April. The Native Oyster has a flat round shell, and the Oyster itself is firm and meaty with big earthy flavours.

It's a bit different this year, the native oysters in the river have had a mixed year, some have grown brilliantly whilst others, well they don't seem to have grown much at all. This is the tricky thing about being an oyster farmer, there are so many variables, sometimes too many for us to understand! Whilst the larger oysters are a good size, we have decided to leave the native oysters in the river for a while longer so we can better understand what's working and where we are going wrong. You would think after doing this for as long as we have, we would have it all worked out by now!

We are still supplying native oysters, but they are from our friends in Whitstable.

We recommend that you keep the Oysters in the fridge with a damp tea towel or tissue on top. They are best eaten as soon as possible after delivery but should last up to three days if cared for properly.
