We consider these mussels from Shetland to be the best we have tasted, big, plump and bursting with flavour.
Our mussels are grown by the Thomason family in the clean and pure waters of Basta Voe, in Yell, Shetland, where they grow the mussels on ropes in crystal clear, pure water.
Much like here at our Fishery on Mersea, the Thomasons only harvest in season when the mussels are at their best, selecting by hand so only the finest mussels leave their Fishery. This is why during the summer we don't sell mussels, the break in harvesting is not only good for the mussels and the environment but it also safeguards this way of life for future generations.
We think 1 kg of mussels is enough for dinner for two adults. Once you have received your mussels place them in a bowl in the fridge, covered with a damp cloth. Rinse the mussels to clean, remove any beards and discard any shells that do not close when tapped. Live shellfish should be cooked as soon as possible, do not keep for longer than three days.
