Live Canadian Lobster

Live lobsters from the pristine Atlantic coast of Canada and the most sustainable lobster fishery in the world.

On arrival, the lobster will be cold and sleepy please keep in the box with the ice packs and place in your fridge and cook on the day of arrival. If the box is too large, place in another container with dry paper in the bottom and damp paper on top of the Lobster and it keep cold. Do not place in water, fresh or salted as this will kill the lobster and also keep the bands on the lobsters claws until it is cooked.

There are many ways to cook your lobster but this is how we do it, the colder the lobster is, the sleepier it becomes so we recommend you place the lobster in the freezer for 30 minutes before cooking. Bring a large pan of salted water to a rolling boil and pop the lobster in head first, then quickly cover the pan to bring the water back up to a boil.

Small (450g - 550g)
Would feed one person for a small main or would be a starter for two people. Cooking time for this size lobster will be about 8 mins on a rolling boil.

Medium (650g - 700g)
Would be a good main for one person. Cooking time for this size lobster would be about 12 minutes on a rolling boil.

Large (900g - 950g)
Would be a main for two people.
Cooking time for this size lobster would be about 15 minutes on a rolling boil.

Please note that the weights are approximate and if you are cooking more than one lobster at a time you will need to increase your cooking time. Whilst every effort is made to ensure your lobster arrives live and kicking, we can not guarantee that it will.

If you are going to dress the lobster yourself, we suggest using the lobster picks so that you can get the delicious knuckle and claw meat out of the shell. We also have the claw crackers to make breaking open the claw shell easier.
