Tobiko is the Japanese word for flying fish roe.

It's mainly used to garnish many different types of sushi, but if you watch the Great British Menu, you'll see tobiko and salmon keta being used to give both a pop of colour and flavour to lots of dishes. It has a red-orange colour, a mild smoky/salty taste, a crunchy texture and is much smaller than salmon keta.
