Colchester Rock Oysters
Description
Our famous Colchester Rock Oysters are truly free-range and live naturally on the seabed, with ample food and space to grow, rather than grown in nets or cages. It's like the difference between a free-range chicken and a battery hen.
The Rock Oyster is available all year round, the shells are long deep and flared, and the oyster is meaty, firm and creamy with a fresh sweet taste. Our Oysters mature in the plankton-rich waters of the Pyefleet Creek to take on a defined flavour full of zinc and other minerals.
Size Guide
Rock oysters are graded by weight into three grades - A, AA and AAA. AAA oysters are huge and these normally are for making sauces. We do have limited availability of AAA so if this is the size you are looking for please do contact us. We have an additional size grade, Piccolo which is our smallest oyster, but still a really nice size.
Piccolo - Small
A - Medium
AA - Large
My favourite size is the Piccolo if its going to be eaten raw, if I am going make oyster rockerfeller or BBQ the oyster then I will use an A. If I am going to make tempura oysters then I would go with an AA as the oyster. How to look after your rock oysters at home
We recommend that you keep the Oysters in the fridge with a damp tea towel or tissue on top. They are best eaten as soon as possible after delivery but should last up to three days if cared for properly.
Don't forget, you do need an oyster knife to open your oysters.
