Pickled Samphire
Description
Pickled Samphire is a moreish accompaniment seafood, crisp and sharp with salty savouriness you only get from samphire.
Made on Anglesea Island in North Wales and winner of a Great Taste award.
Try it with finely sliced with a few drops of the pickling liquid on top of oysters like you would a shallot vinegar or alongside your seafood platter as a pickle. It would be really good in a brown butter sauce to serve with lobster. There are lots of ways you could use the pickled samphire, I am sure it will become a pantry staple.
Lots of bright vinegar acidity, a touch of creaminess and plenty of sharp lively twang. The samphire adds a very classy savoury base note and some minerally freshness and lemony twang. - One Star: Great Taste Awards 2020
