These mini lobster rolls are easy to make but look impressive - perfect for hassle-free entertaining.
Serves 8 as a canapé
INGREDIENTS
- 100g lobster meat
- 100g Mayonnaise - you could mix it up with one of our flavoured mayonnaises?
- 2 tablespoon lemon juice
- A small bunch chives, chopped
- 1 large stick celery, finely diced
- a few pinches cayenne
- 1 tbsp butter, melted
- 8 mini rolls
Chop the lobster meat into chunks.
Mix the mayonnaise, lemon juice, most of the snipped chives, diced celery and three pinches of cayenne. Season with white pepper and a little salt, then gently fold through the lobster meat and keep chilled.
Just before serving, cut a slit in the top of the the rolls. Brush some of the butter on the insides, and gently warm in a low oven (160C/fan 140C/gas 3). Spoon the filling between the rolls.Add a pinch or two more cayenne and the rest of the chives.
