Our worry free, pre-shucked rock oyster.
We have taken our famous Colchester Rock Oyster and made it extra special. Our Colchester Pyefleet oysters go through an additional high pressure process that removes any norovirus from the oyster and releases the meat from the shell making it really easy to open.
There is always an element of risk in eating a raw oyster, it's something we all know about but something that we don't always like to talk about. But now, with our Pyefleet oyster you don't have to worry, there is no risk with eating a raw oyster.
The oysters are taken out of our depuration systems, banded and then exposed to 6000 bar of pressure – six times the pressure at the deepest part of the ocean. This process has been scientifically proven to render any virus harmless.
Pre-shucked
One of my favourite things about the Pyefleet oyster is that it is pre-shucked, when you want to open then, simply cut the band, wait a moment and then you just need to lift the top shell off with a swipe of your oyster knife. It is that easy. No trying to find the best place to wriggle the knife into the oyster and forcing the shell open, it's all done for you.
Same great flavour and texture
Our Pyefleet oysters have an earthy flavour, salty at first but with a creamy, savory, truffle like finish. Should you cook them they develop a delicious salty sweetness that leaves you reaching out for more. The plump meaty texture is silky smooth giving a really pleasant mouth feel, because you must chew and taste the oyster rather than swallow it straight away.
How to store your Colchester Pyefleet oysters
We recommend that you keep the oysters in the fridge cup side down. They are best eaten as soon as possible after delivery but can be enjoyed up to six days after delivery.
