If you can't decide if you prefer our Colchester Pyefleet oysters our Colchester rock oysters or our native oysters, you should order our oyster tasting selection.
You get two of each oyster to try, so six oysters in total. It's a great way to try all three of our oysters to see how they compare and which one you prefer.
Native oysters are the oysters only available when there is an R in the month, they are the flatter oyster and have the smallest amount of meat and the strongest flavour. You will find these to be the hardest to open as the shells are quite flakey, so be gentle and take your time.
Colchester Rock oysters are our standard rock oyster, available all year round and a great oyster, juicy and full of earthy flavours, a little bit sweet and a little bit salty, really complex. These are easier to open than native oysters, but still go gently and take your time.
Colchester Pyefleet oysters are are latest worry free, pre-shucked oysters that have all the flavour of the Colchester rock oyster as thats what they are, but they go through a high pressure process that shucks the oyster. The meat is full of flavour, plump and silky smooth, it's a real pleasure to eat. To open these, just remove the band and wait a few moments and then you can lift off the top shell, it's really easy.
With all of the oysters, once you have opened them, tip away all the juice as it's just seawater. Most importantly to really taste the oyster, chew it, just like you would a piece of meat, that's how you get to really taste them.
Don't forget to add an oyster knife, you will need one to open the oysters!
We recommend that you keep the Oysters in the fridge with a damp tea towel or kitchen roll on top. Our Colchester Pyefleet oysters are a little different, they arrive in a sealed bag, so simply place the bag in the fridge until you are ready to eat them. They are best eaten as soon as possible after delivery but should last up to three days if cared for properly.
