Sublime Butter No.17 - Chimichurri

A herby green butter in the style of the classic sauce, with parsley, oregano, coriander, lemon and garlic. It’s good on just about any savoury dish. Slide a slice over hot prawns, stir it through seared scallops, or spread it over a split lobster before it goes under the grill. It also works well on a steak or a tray of roast potatoes.
