Sublime Butter No.8 - Red Chilli, Smoked Salt & Lime

Salt, fat, acid and heat, all in one block. Red chilli brings a gentle warmth, lime adds a fresh, zesty lift, and the salt gives it a savoury depth. It suits shellfish well. Spoon it over lobster or prawns, or let it melt into a pan of seared scallops. It’s equally good over corn on the cob, roast potatoes or a grilled chicken thigh.
